The icy, glacier-fed waters of Alaska's Copper River yield the finest salmon in the world: Copper River Salmon. These unique fish, with their deep, red-orange color and tender, flaky texture are only available for a few weeks each year. And those few weeks are right around the corner.

We take each thick fillet and delicately sear it to trap the natural juices and then prepare it using one of our special techniques. Regardless of how you order it, you'll quickly come to realize that not all salmon are created equal.
